Menu survivors: Akutak. Eskimo “ice cream”

But we digress. It is understood that it is necessary to provide it. Take, for example, the Eskimos. Lives in the Arctic Circle. The main food is seals, fish, poultry and other meats. There is a special long-term storage dish called akutak

The word “akutak” in the Eskimo language means “something mixed.” It is a dishwasher. When preparing it, it is a mixture of fish and meat is used. Some researchers find it a distant resemblance to ice cream. Well … And why not? Ice cream with fish, whipped animal fat. Comparison with ice cream did not arise from scratch, because the main method of storage acutaka – deep freeze in the permafrost.

Animal fat is an excellent pre akutak while it is not frozen, it is not losing its useful and nutritional properties. And in the unfrozen, it will endure quite a few weeks before it starts to deteriorate. The only negative – an unusual appearance. Seriously, it looks awful.

Nutritional value, then acutaka this is more than enough. Proteins (fish meat), fats (lard), carbohydrates and fatty acids. The taste of fish will prevail during cooking.

Every family has its own recipe acutaka, which is transmitted orally from generation to generation. But the recipe looks like this:

  • 1 cup of bacon (deer, elk, caribou)
  • 1 cup of melted animal fat (seal or whale)
  • half a cup of water
  • two glasses of different berries (blueberries, cloudberries, cranberries, blackberries)

First, chop the berries and lard. This should be done in separate containers. For the Eskimos, for this, even the dishes were tattered tukmak pan. In the middle of the glass of melted fat. The main thing is not to burn your hand. Continue stirring, continue to stirring the heat and a quarter of a cup of water. Gradually, it becomes white. And then we add the last third and add berries. It is the lipid layer. Also you can add chopped boiled or fried meat (of room temperature, of course).

It can be used as a preserve. Due to all this akutak really long stored and not spoiled. Ice cream will be damn strange and unusual. Therefore, it is possible to add a pattern.
